Samla Kari Khmer - Cambodian Curry
Samla Kari is famous people eat with bread and noodle.
Ingredients
1 - 400g chicken
2- 1 tbsp kapi
3 - 1/2 cup coconut cream
4 - 3 cups coconut milk
5 - 3 tbsp fish sauce
6 - 1 tbsp salt
7 - 2 tbsp sugar
8 - 400g sweet potatos
Kroeung
1- 40g lemon grass stalk, slice very thinly
2- 1 tbsp rhizome, cut small
3- 1 tbsp turmeric, cut small
4 - 1 tbsp galangal, cut small
5 - 5 garlic cloves
6 - 5 shallots
7 - 20g kroeung kari, roasted and pounded finely
8 - 5 dried red chillies, soaked, drained and chopped into paste
HOW TO COOK
Clean and chop chicken quite big pieces, set in one place. To make the kroeung above, pounding lemon grass stalk first in the clay mortar when fine follow other 5 kinds below and continue to pound until smooth then add kroeung kari and red chili paste, lightly pounding.
Fry the kroeung in pot with oil over a medium heat, stir well when given good smell add kapi, coconut-cream and chicken, simmer about 15 minutes then add coconut milk, season with fish sauce, salt and sugar.
Once bubble add sweet potatoes and allow it boiling for about 15 minutes or until well cooked.
